Of oriental creation, bubble tea or Bubble tea , as it is known outside Brazil, has been very successful in several countries. Based on green or black tea, this comes with fruit nectar, milk or yogurt, in addition to bubbles that, very fragile, easily burst in the mouth. These, developed through molecular gastronomy techniques, can have different flavors such as lychee, strawberry, passion fruit, mango and yogurt, and are made from tapioca and concentrated juice bubbles.

The feeling of consuming bubble tea
Tea should be drunk with a thicker straw that allows bubbles to rise, and this provides an explosion of flavor when drinking. Healthy and refreshing, the tea is an excellent option for those who want to keep their diet and refresh themselves on summer days, with the addition of the presence of green tea, which helps with weight loss.n
Brazilian version of bubble tea
As bubbles can’t be found around here yet, some people have replaced them in the recipe with sago. This version was also very beautiful and really tasty. Check out the recipe below.
How to prepare Brazilian bubble tea?
The drink, typical of Taiwan, can be made at home with some minor changes: instead of using the rare bubbles used by oriental people, we can add sago. The following recipe has 201 kcal and takes, on average, 10 minutes to prepare. If you want to make more than one serving, double the recipe.
To make the bubbles, you will need:
- 1 cup of sago coffee
- Water (the measure needed for cooking, which can be found on the packaging of the purchased sago brand)
- 2 tea sachets to flavor and color the bubbles
- 2 tablespoons of natural honey
To prepare the bubbles, check the sago packaging for the preparation, rest and cooking time so that the beans are very soft. When waiting for the sago to rest, you should take the cooking water and bring it to the fire. When it boils, add the two sachets you chose to flavor and color the bubbles and turn off the heat.
Cover and leave for approximately 10 minutes. Remove sachets. After the sago rest period, add it to the prepared tea and heat, preparing the sago as indicated on the package. When ready, mix the honey and set aside.
For tea, use:
- 200 ml of mineral or filtered water
- 1 green tea sachet
- Honey or sweetener to taste (it can be sugar, but then it won’t be healthy and will increase the calories)
- ½ cup of fruit and herbal pieces such as blueberry, pomegranate, raspberry and tangerine, for example
- 4 ice cubes
Iced tea should be prepared with 200 ml of hot mineral water. In this water, you will add the green tea sachet and let it steep for approximately 10 minutes. Then, just remove the sachet and wait for it to cool. Reserve for assembly.
In a glass, place the sago at the bottom and place the fruits and herbs next. Add ice and finally add tea, sweetening as you prefer.
